POURGOURI - "BULGAR PILAF"

AN EASY ENTREE, SIDE DISH OR MAIN!

Ingredients:
- 250g Bulgar Wheat - 30g Vermicelli pasta noodles
- 1 large onion finely chopped
- 2 Tbsp olive oil
- 1½ cups chicken stock
- Salt and pepper
- Greek yoghurt (for serving)

Method:
1. Heat oil in a deep pan and fry onions for 2-3 minutes until soft (not brown)
2. Stir in Vermicellu pasta noodles (breaking them apart as you add them to the pan) and continue to fry on medium heat until oil is absorbed
3. Rinse Bulgar Wheat under cold water then add to pan together with chicken stock, salt and pepper
4. Cover and let simmer on low heat for 10 minutes (until stock is absorbed)
5. Take off heat and allow to cool for at least 10 minutes prior to serving
6. Serve with a dollop of Greek Yogurt
