- 800g plain flour
- 2 tsp sugar
- 1 tsp salt
- 2 Tbsp oil
- 1 sachet yeast
- Water to mix

- 350g Halloumi
- 2 Tbsp semolina
- 1½ tsp baking powder
- 1 Tbsp Mastika ground
- 1 tsp mahelebi
- 180g sultanas
- 4 eggs, lightly beaten
- 1 egg (keep separate)
- sesame seeds

1. Sift flour into mixing bowl and stir through sugar, salt and yeast
2. Add oil and water to mix into firm dough - cover with plastic and allow 45 minutes to rise

1. Grate the halloumi cheese into a mixing bowl and add flour, baking powder
2. Gradually mix in the beaten eggs, mahelebi, mastika, semolina and sultanas, ensuring mixture does not become too soft (reduce the amount of beaten eggs if required). Mixture should be firm
Once dough and filling mix are complete:

1. Divide dough into small pieces and using a rolling pin, roll out the dough into 10cm circles
2. Place each dough pieces onto large plate of sesame seeds (press down so that 1 side is covered in sesame seeds)
3. Transfer dough from sesame, onto a flat surface bench (sesame side facing down).
4. Place approx. 2 heaped tablespoons of filling in the centre of the (non sesame side) dough
5. Stretching the dough if necessary, lift 4 sides of dough (making a square) over the mixture, leaving a 1 inch opening at the top
6. Using a fork, press the dough at the edges of the square pie to seal and to firmly pack the filling at the top if required
7. Brush tops with beaten egg and bake 250 degrees (Celsius) for 15 minutes until golden

Served warm or cold. Store in the freezer & re-heated in microwave for a tasty snack
