Kolokopites (Pumpkin raisin pastries)

TASTY & ALL NATURAL INGREDIENTS - PERFECT FOR BREAKFAST, SNACK OR AFTERNOON TEA!
Ingredients:
Stuffing (to be prepared 24 hours prior and stored in the fridge overnight)
- 3 cups of pumpkin diced
- 3-4 Tbsp of Bulgar Wheat "Pourkouri"
- 1 cup raisins (large)
- 3 Tbsp olive oil
- 2 Tbsp sugar
- 1 tsp of ground cinnamon
- ½ tsp ground cloves
- ½ tsp salt
- ½ tsp pepper
Dough
- 4 cups plain flour
- ½ cup olive oil
- ¾ cup water
- 1 Tbsp lemon juice
- 1 tsp salt
Method
1. Using a mixing bowl, combine flour, salt and olive oil with fingers until combined
2. Add lemon juice and water, in small increments at a time; kneading the dough until firm - cover with plastic & let rest for 40 minutes
3. Knead dough for 5 minutes and divide into 6 pieces
4. Using a rolling pin, roll dough out until 2-3mm thick & cut out circles approx 14cm diameter
5. Brush edges of circle cut outs with cool water and fill with approx. 2 Tbsp filling
6. Fold over pastry wrapping filling comfortably and using a fork, seal the edges
7. Place onto baking paper on a baking tray cook at 180 degrees (Celsius) for 25 minutes or until golden brown
