Tsatsiki Dip (YOGHURT, GARLIC & CUCUMBER DIP)

NUTRITIOUS & LOW CALORIE DIP PERFECT FOR ENTERTAINING!
Ingredients - 2 cups of thick Greek yoghurt
- 2 large cucumbers (2 large or 5 small)
- 1 tablespoon of white vinegar
- 1 tablespoons olive oil
- 1-1 1/2 tablespoons minced garlic
- 1-1 1/2 tablespoons finely chopped fresh mint
- Salt and Pepper
Method
1. Place a clean cloth or paper towel around a colander and place over a bowl. Tip yogurt into colander and strain for 4-5 hours until most of the water is removed
2. Remove seeds from cucumber and grate; or cut into miniature cubes. Squeeze out excess liquid
3. Combine yoghurt and cucumber and stir in vinegar, oil, garlic, mint, a good pinch of salt and pepper. Cover and place in fridge overnight
Serve with Johnsof Toasts & Whole Wheat Crackers
