Trahana Soup

Tasty Trahana "Bulgar Wheat" Soup

- 200g Trahana
- 1/2 Teaspoon salt
- 130g Halloumi (cut into small cubes)
- 1.5 Litres of either Chicken, Meat or Vegetable stock (boiled chicken in preferred which is added to the soup upon serving)

1. Soak 200g of Trahana in a small bowl of water (just covered) for 3-4 hours or until Trahana absorbs the water. Alternatively cover with hot water and place in blender once softened.

2. Bring stock to the boil & add salt, stirring continuously over high heat & add trahana

3. Reduce to low heat and cook for 40 minutes, stirring occasionally. Add water if soup is too thick. Do not cover.

4. After 30 minutes, add Halloumi cheese.

5. Some people prefer a thicker consistency by adding yoghut, lemon juice and egg.

Take 2 cups of soup, add a splash of cold water and whisk in a few dollops of yogurt or egg. Once combined, pour contents back into the soup. Add lemon juice from 1/2 lemon then bring the soup to the boil.

Season & serve (Serves 4)

At only 240 calories per serve, this brilliant winter warmer soup makes a great entree, simple pasta dish or main meal when combined with chicken or meat. Enjoy!

Trahana soup tastes delicious when re-heated so extra soup should be refrigerated & served the next day
